Ingredients:
- ½ cup Best Choice Butter
- 1 small onion, diced
- 3 cloves garlic, minced
- 10 oz of Best Choice Frozen Chopped Spinach, thawed and drained
- 4 oz can mushrooms, drained
- 6 oz Best Choice Superior Selections Feta Cheese Crumbles
- 8 oz bag Best Choice Shredded Mild Cheddar Cheese, divided
- Best Choice Salt, to taste
- Clearly by Best Choice Ground Pepper, to taste
- 1 Best Choice Deep Dish Pie Crust
- 4 Best Choice Large Eggs
- 1 cup Best Choice 2% Milk
Directions:
- Preheat your oven to 375°F.
- Melt the butter in a medium skillet over medium heat.
- Add the onion and garlic to the pan and sauté until the onions are lightly browned, about 7 minutes.
- While the onions and garlic are cooking, drain the thawed spinach.
- Stir in the spinach, mushrooms, feta, and 1/2 cup of cheddar cheese.
- Cook the ingredients for an additional 2-3 minutes and season with salt and pepper to taste.
- Remove the skillet from the heat and spoon the mixture into the pie shell.
- Whisk the eggs and milk together in a medium bowl until combined. Season with salt and pepper.
- Pour the egg mixture over the spinach mixture in the pie shell, allowing both mixtures to thoroughly combine.
- Place the pie crust with the mixtures in the oven and bake for 15 minutes.
- While the quiche is baking, sprinkle the top with the remaining cheddar cheese and bake until it is set in the center, about 35 to 40 minutes longer.
- Remove the quiche from the oven and allow it to cool for 5 minutes.
- Slice into six pieces and enjoy your Spinach & Cheese Quiche anytime of the day!
